What I Ate Wednesday {WIAW}



I'm linking up with Jen over at Peas and Crayons for this weeks WIAW!

For the past week I have been eating lots of cereal. I always switch up my breakfast (unlike all you oats lovers) but couldn't shake a big bowl of honey nut cheerios with strawberries every morning.


I know some of you say cereal can only be a snack. It never fills you up. Maybe you are eating it without ginormous strawberries on top. This holds me over until 11:30 and I just suck it up until noon.

This morning I switched it up and made me and CL blueberry pancakes (i had leftover batter from the weekend). I topped it with a heaping amount of sugar free syrup. mmmmm.


One huge, thick and dense pancake coming right up! I used frozen blueberries and trader joe's buttermilk pancake mix. To be honest, I think the best pancakes turn out when I add in some greek yogurt to the batter!

I love crock pots. Who doesn't? I even have an app on my iPhone for crock pot recipes but nothing beats the classic pot roast. Especially with local meat, because it really does beat the roasts I used to buy from the grocery store.



I cheat and use the seasoning packages but you could easily build your own.

IMPORTANT NOTE: I always sear my roast in a pan with olive oil, salt and pepper before putting in the crock pot. I add in half of a white onion sliced, two medium red potatoes and celery. Other good add ins would be any root vegetable.

Add the suggested amount of water per seasoning package (3 cups), set your crock pot to low, put a dish towel over it (to secure the heat) and you have an amazing meal waiting for you when you get home.

So amazing that you won't even want to stop eating long enough to take a picture.

But no worries, it's summertime and there is no way you and your mister can eat an entire roast. So that can only mean you use the leftovers for shredded beef bbq sammys in the morning.



Yeah. you are drooling right now. Just admit it. Do you see how easily that roast was shredded. It literally fell apart when I took it out of the crock pot! CL had his on Ezekiel bread, I just couldn't do that to my bbq....I put on a potato roll.

I paired this with some no sugar added apple sauce, half and apple and some sliced berries for lunch.


I'm not going to lie. I can't wait for lunch.

  2. I am with you on cereal for breakfast. I ODed on oats and haven't had them for perhaps 8 months. Frankly, Greek yogurt with cereal fills me up just fine...and a perfectly planned morning snack tides me over until lunch. :)

    I think the problem with cereal is that it's so yummy you just want to go back for more because you just want more...not because you NEED more.

    And what I need right now is a crock pot.

  3. I love crockpots! I mostly use mine for beans or as a rice cooker, because I love the cheapness and efficiency of it. Chili is my go-to crockpot meal in the winter. And I am a HUGE cereal fan as well, but I can't buy it or I'll just eat the entire box over the course of the day...

  5. Hey I'm an oat lover and I've been eating my Cheerios like it's going out of style! Love the cinnamon burst, yumm :D Those pancakes look really yummy. I've never cooked anything in a crock pot haha So sad

  6. I used to make pot roasts all the time when I ate meat. My bf loved them... there really is no vegetarian subsitute for pot roast.... sigh..

    I just got hooked on Greek Yogurt... I haven't tried the flavored kind but loving it in place of sour cream on everything!

  7. I'm a huge crock pot fan too. I have a recipe for slow cooker cashew chicken that's pretty darn good. I cook it when the hubby and I have a hankering for take-out.

  8. I think you could top cardboard with good toppings and it would hold you over. Cereal / oats are just a flavor base ;)

  10. I always eat the kashi go lean cereal for breakfast with strawberries, bananas and blueberries, and I think it holds me over for quite some time. I usually have a small snack at 11, and then lunch (salad/wrap/soup or some combo) at 1ish

  11. those strawberries look soooo delish I bought some today and cant wait to eat them as for the crockpot thing I have never used one for some reason they intimidate me bigtime haha!

  13. I'm not a huge cereal fan, but fruit and nut butters are keys for satiety :) I actually love Cheerios- honey nut, chocolate, and cinnamon preferably :)

  16. sometimes cereal keeps my belly full and sometimes it doesn't... so weird how it varies so much!

    lol bbq is perfect on a potato roll... i dont think I could have gone with trusty E bread either. haha though its perfect for breakfast! <3

  17. cereal rarelllly keeps me full. raisin bran does. but only a huge bowl with a banana :)

    potato rolls are amazing... i havent had one in a LONG LONG time... you know i'd rather save my cal's for dessert ;)

    2. I had some blueberries with fiber one cereal...I know it sounds simple...but it taste sooooo gooooood. ( Maybe a good alternative to cheerios and strawbs if you get bored ;)

  19. We registered for a crock pot for a wedding gift and I'm realllly hoping we get one! I love the idea of throwing stuff in there before I leave for work and having it all ready when I get home :)
